Who knew Broccoli could taste this wonderful? Try this simple and healthy alternative to traditional dips, filled with fibre and Vitamin K AND it’s Vegan friendly too! And the part we love the most?  You can feel good about eating it, as it’s broccoli after all! Why not try adding additional liquid into your Beaba Babycook with these ingredients to make a delicious soup instead? Either way we think this is a great, versatile, springtime option for a snack, lunch or dinner.

Add additional liquid to make into a lovely soup.

INGREDIENTS

350g (2 Cups) of Broccoli

32g (1/3 Cup) of Parmesan Cheese

35g (1/3 Cup) of Slivered Almonds

53g (1/4 Cup) of Olive Oil

125g (1/2 Cup) Ricotta

1 TSP of Garlic

2 TSP Lemon Juice

INSTRUCTIONS

Put the broccoli in the steamer basket.

Pour water into the tank (level 2).

Start the cooking process.

When the broccoli is cooked, put it in the blending bowl and discard the cooking liquid.

Add the olive oil and garlic, followed by the rest of the ingredients.

Blend, adding additional oil if needed.
