BANANA & APPLE BLENDER PANCAKES – My Little Food Critic

MAKES 12 MINI PANCAKES / PREPARE 5 MINS / COOK 10 MINS
These pancakes are so quick to make, fluffy and delicious! They are packed full of nutrient dense ingredients and are free from any added sugar making them perfect for babies too! Serve alongside some fruit and yoghurt for an easy and scrumptious breakfast.
1 cup/90g rolled oats
3/4 cup/180ml milk of choice
1 ripe banana
1 tsp vanilla extract
1 tsp Ceylon cinnamon
1 tbsp chia seeds
1 tsp baking powder
1 grated apple
1 tbsp coconut oil (for frying)
1. Add the oats to the Babycook® blending bowl and blend until the oats break down
2. Then add the remaining ingredients (except for the coconut oil) to the Babycook® blending bowl and pulse until everything is well combined and a pancake batter has formed.
3. Melt the coconut oil in a pan over a medium – low heat and drop in two tbsp of the pancake batter to form mini pancakes, continue until the pan is full; when bubbles appear, carefully flip each pancake and cook for a further 2 minutes. Repeat with remaining batter.
4. Serve with your choice of toppings.
Oats – are a great source of fibre and provide slow-release carbs.
Chia seeds – are high in protein and omega 3 fatty acids.
