BEETROOT & DATE BISCUITS

MAKES 15 BISCUITS/ PREPARE 10 MINS / REFRIGERATION 4 HOURS
INGREDIENTS
65 g Pitted dates
10 g Strawberry powder freeze-dried
20 ml Coconut oil (melted)
50 g Desiccated coconut
30 g Ground almonds
75 g Raw beetroot
ICING
45 g Cream cheese
1 tbsp Coconut oil, melted
1 tbsp Maple syrup
10 g Desiccated coconut
INSTRUCTIONS
Chop the beetroot into small pieces and put in your Béaba Babycook ® steamer basket. Add water to level 3 and cook until soft. Once completely cooled, finely grate and reserve.
In your Béaba Babycook ® blitz together the dates, strawberry powder, coconut oil, desiccated coconut and ground almonds until they form a smooth paste.
Add the grated beetroot to the mix and pulse until combined.
Fill the bottom of small muffin cases or your Béaba Multiportion with a teaspoon of the biscuit mixture, packing it well with the back of the spoon. You can line the bottom of your cases with a small baking parchment circle for ease of release. Place in the fridge.
To make the icing, mix all the ingredients in a bow. Mix gently as you want to keep the texture. Top each biscuit with the icing and smooth with the back of a spoon.
Refrigerate for at least 4 hours to let it set.
Sprinkle the biscuits with a little more desiccated coconut when you are about to serve them.
NUTRIFACTS
Dates are low in calories and high in fibre. They are also high in vitamin B6, which is necessary for the metabolism of proteins and potassium to maintain healthy blood pressure.
Coconut is high in saturated fat; however, it contains high levels of lauric acid, a saturated fat that research shows increases your good cholesterol. However, as it does contain other saturated fats that may promote cardiovascular disease, consume in moderation.
Almonds are high in fibre and vegetarian protein and a good source of dairy-free CALCIUM for healthy teeth and bones.
Beetroot is high in FIBRE that helps intestinal health & transit. Beetroot contains VITAMIN C that supports the immune system, FOLIC ACID which is necessary for red blood cell production and POTASSIUM to help maintain healthy blood pressure. Beetroot also contains good levels of GLUTAMINE that helps maintain a healthy gut. The chemical responsible for dark purple colour in beetroot is BETALAIN, an antioxidant that research shows can protect against the damaging effects of cholesterol.
