VERY BERRY MUFFINS

MAKES 6 MUFFINS / PREPARE 5 MINS / COOK 15-18 MINS
Our Multiportions are most commonly used for freezing purées, but did you know that you can also bake in them?
240g (2 Cups) Flour
135g (3/4 Cup) Coconut Sugar
3 teaspoons Baking powder
1/2 teaspoon Salt
250ml Milk of choice
108g (1/2 cup) Coconut oil melted
1/2 tablespoon Vanilla extract
152g (1 cup) Strawberries chopped
56g (1/3 cup) Blueberries
Preheat oven to 180°CPut the flour, coconut sugar, baking powder and salt in the blending bowl.
Pulse-blend to combine.
Mix the wet ingredients in a large bowl.
Combine the dry ingredients with the wet ingredients, stirring well. Note that there will be clumps.
Fold in the strawberries and blueberries.
Add the mixture to the Multiportions until they are about 2/3 of the way full.
Bake for about 15-18 minutes, or until a toothpick comes out clean.
