BLACKBERRY & RASPBERRY PUDDING

INGREDIENTS

60g bread

100ml milk

1 egg

40g blackberries

40g raspberries

INSTRUCTIONS

Cut the bread into small pieces.

Cover it with milk and leave it in the refrigerator to soften and absorb the milk.

Squash the bread with a fork when it is very soft, then blend the mashed bread in your Beaba Babycook.

Add the egg and blend again.

Wash the blackberries and raspberries carefully and cut them in half.

Add the fruit to the mashed breadcrumbs and blend.

Place the preparation is a small ramekin and put it in the steamer basket.

Pour water into the tank (level 3) and start cooking.

Leave to cool a little and serve warm.

Cooking tip

If you do not find any blackberries or raspberries, you can make this pudding with apples or pears, which are also in season. Otherwise you can find frozen blackberries or raspberries, ideal for cooking in this way.

This little pudding, ideal for using leftover bread, is a meal in itself: it contains animal proteins with the egg, complex carbohydrates (sugars) with the bread; a milk product and the calcium in the milk; and finally fruit, which provide fibres, vitamins and minerals, and in this case, very little sugar.

Before this highly nutritive dessert, the child can eat a small purée of vegetables with some starch.

Alternatives for lactose, gluten and egg intolerant babies

An allergic child should have the possibility of tasting this little pudding which leaves nice gustatory memories. The bread rich in gluten can be replaced by spelt-wheat bread.

You can use rice milk or almond milk to replace the dairy milk. The principle is to be able to soften the stale bread and make the milk slightly sweet.

Finally, to give the pudding body, you can add a little potato starch and cook it according to the instructions on the starch packet. Or then you can heat the dairy milk (or the rice or almond milk) with agar-agar and add the fruit when everything else is ready. In this case, you should not cook the pudding: as it cools its consistency will become like that of a classic pudding.
