CHICKEN KIEVS

INGREDIENTS

Refined olive oil

250g Skinless, boneless organic chicken breast fillets, chopped

2 Garlic cloves

4 tbsp Cream cheese

A handful Fresh Parsley

50g Wholemeal flour

50g Dried wholemeal breadcrumbs

1 Large organic egg

20g Parmesan cheese (grated)

2 tbsp Mixed seeds

Black pepper (optional)

To serve Cherry tomatoes, red peppers, cucumbers and sweet potatoes wedges

INSTRUCTIONS

Pre-heat the oven to 200°C. Line a baking paper on a baking tray and lightly grease the paper with olive oil.

Place the mixed seeds in your Béaba Babycook® and pulse a few times, then add the breadcrumbs and parmesan and pulse again. Reserve.

Add the chicken, garlic, cream cheese, parsley and black pepper in your Béaba Babycook® and mix to form a chunky paste – do not over mix, you need some texture.

With wet hands, shape the mixture into 8 patties.

Make space on your bench for three plates: one for the wholemeal flour, another containing the breadcrumbs, seeds and parmesan and a shallow bowl for the beaten egg. Coat the patties in the flour then dip into the egg, then coat with the parmesan seed breadcrumbs. Place your patties on the prepared baking sheet and bake for 20 min, turning once, until crisp.

Serve with cherry tomatoes, red peppers, cucumbers and sweet potato wedges baked in olive oil.

TIP: for a gluten and wheat-free free version, substitute gluten-free oats for breadcrumbs and use a gluten-free flour such as rice or buckwheat to coat the chicken Kievs.
