CREAMY TOMATO PASTA – My Little Food Critic

This is one of our favourite “go to” quick meals and pasta is always a hit isn’t it?!
The super quick and flavoursome sauce comes together while the pasta cooks and it is so creamy and delicious! It couldn’t be any easier!
I like to add a sprinkling of hemp hearts to amp up the protein and serve alongside veggies to create a balanced meal.
1 cup pasta of choice
1 tbsp avocado oil
1 heaped tsp minced garlic
A large handful of spinach, finely chopped
A handful of basil, finely chopped
1/4 cup tomato sauce or sub passata (I always have a stash of my homemade veggie sauce in the freezer)
A pinch of pepper
1/4 cup full fat cream cheese
A splash of milk
Cook the pasta according to the packet instructions.
Heat the oil in a pan and sauté the garlic for a couple of minutes. Add in the spinach and basil and cook for a couple of minutes.
Pour in the tomato sauce and cook for a few minutes.
Then add in the cream cheese and pepper. Stir until smooth and creamy. Add in a splash of milk if the sauce is a little thick.
Drain the pasta and add to the sauce, stirring well.
The veggie loaded tomato sauce recipe is full of vitamins and minerals and adds a great nutritional boost to this meal.
