DATE & SPICE MUFFINS

INGREDIENTS
4tbsp Olive oil
75 gr Almonds
60 gr Coconut flour
75 gr Rice flour (or other gluten free flour)
1/2tsp Bicarbonate of soda
2 tsp Baking powder
A pinch Salt
60 gr Pitted dates
2 Bananas
4 Organic eggs
3 tbsp Runny honey
1/2tsp Cinnamon (ground)
Crumble Topping
1 tbsp Olive oil
2 tbsp Porridge oats or buckwheat flakes
INSTRUCTIONS
Pre-heat the oven to 180 C. Lightly grease your Béaba Silicone Multi-portion® or a muffin tray lines with paper cases.
Put the almonds in your Béaba Babycook® and process to form a flour. Add the other flours, bicarbonate of soda, baking powder, salt and cinnamon. Pulse a few times and transfer to a bowl.
Chop the dates in your Béaba Babycook ® and add to the flour mix.
Put the oil, honey, bananas and eggs in your Béaba Babycook® and pulse a few times.
Now gently fold the wet ingredients into the dry.
Spoon the mixture into the prepared muffin tin and sprinkle over the topping.
Bake for 15-20 min until firm and golden.
Leave to cool completely in the Béaba Silicone Multi-portion® or baking tin.
You can serve this with fresh fruit and yogurt for breakfast or as an afternoon snack.
