FRUITY GRANOLA BARS – My Little Food Critic
SUITABLE FROM 18 MONTHS
PREPARE 10 MINS / DEHYDRATE 4 HOURS AT 45°C
MAKES 10 – 12 GRANOLA BARS
These flavoursome and fruity bars are a healthy, great for ‘on-the-go’ snack for all the family to enjoy.
1/2 cup/100g unsulphured dried apricots
1/4 cup/60ml hot water
2 cups/180g rolled oats
1/4 cup/60g desiccated coconut
1/2 cup/75g finely chopped nuts (any of choice)
1 tsp vanilla
2 tbsp almond butter
1/4 cup/60ml apple sauce
1 tbsp honey (optional)
Optional Melted chocolate for drizzling
Add the dried apricots and hot water to the Babycook® Neo (or a blender) and pulse until combined to a paste.
Add the oats, coconut and mixed nuts to a large bowl.
Stir to combine.
Then add the vanilla, apricot paste, almond butter, honey (if using)and apple sauce.
Stir to combine, until the mixture forms a dough.
Line 1 mesh dehydrator tray with a non-stick sheet or parchment paper.
Use your hands to press the mixture onto the tray in a rectangular shape about 3/4 inch thick.
Dehydrate for 4 hours at 45°C.
Once dehydrated slice into bars.
If you would like you can drizzle with some melted chocolate.
These can be stored in an airtight container in the fridge for 7 days.
Dried apricots are high in vitamin A and iron.
