MEXICAN SWEETCORN & PEA FRITTERS

INGREDIENTS
45g Polenta
60g Wholemeal flour
A pinch Salt (optional)
1 tbsp Baking powder
15g Butter
½ tsp Dried chili flakes (optional)
A pinch Smoked paprika
1 tbsp Fresh coriander leaves, chopped
1 Egg, beaten
125g Sweetcorn kernels (frozen or fresh)
125g Peas (fresh or frozen)
3 tbsp Olive oil
75ml Milk
INSTRUCTIONS
Mix the polenta, flour, salt (if using) and baking powder in your Béaba Babycook ® and pulse a few times to mix well.
If your sweet corn and/or peas are frozen you can thaw them in your Béaba Babycook ® with the steamer option.
Melt the butter in a small pan on the hob or in a little container in the steamer basket of your Béaba Babycook ®, then mix with the egg and milk and add to the dry ingredients. Pulse a few times to form a batter. Add the chili flakes (if using), paprika and coriander, pulse a few more times and transfer to a bowl. Finally, stir in the corn and peas.
Heat the oil in a frying pan and add tablespoons of the mixture to the pan to form little fritters.
Cook for 2/3 min on each side until browned.
Serve with tomato salsa to dip and a poached/fried egg from the age of 12 months.

Polenta is gluten-free so it is a great carbohydrate alternative to pasta or cous-cous for those with gluten sensitivities.
Eggs are rich in PROTEIN to help us grow and heal. Additionally, eggs contain VITAMIN A that supports vision and healthy skin as well as RIBOFLAVIN that promotes normal growth and VITAMIN B12 that supports red blood cell health.
