OAT & BLUEBERRY BANANA MUFFINS

16 MUFFINS / PREPARE 10 MINS / COOK 25 MINS
2 ripe mashed bananas
2 1/2 cups of oats (1 cup of which, blended into oat flour)
3 tbsp honey or maple syrup
1 tsp vanilla extract
1 1/2 cups of blueberries
3/4 cup of milk
1 tsp cinnamon
2 tsp baking powder
3 tbsp vegetable or rapeseed oil
Pre-heat your oven to 180°C
Place 1 cup of oats into the Babycook mixing bowl to ground into oat flour
Mix together the whole oats, oat flour, baking powder and cinnamon with the mashed bananas and stir before gently folding in the blueberries.
Whisk together the remaining ingredients before stirring into the oat mixture until combined.
Pour into 16 muffins using the multiportion tray and 10 paper or silicone muffin cases.
Cook in the oven for approximately 25 minutes.
