PUMPKIN SPICE TRUFFLES

Autumn is officially in the air and you know what that means….. More pumpkin, spice and everything nice to go into your Beaba Babycook! Here’s our deliciously tasty Pumpkin Spice Truffles, perfect for any occasion with friends, family, or when you just need some “spice” in your life! Made with lots of our favourite ingredients including biscuits and chocolate, these tasty indulgent finger foods are the perfect treat for older babies.
INGREDIENTS
142g (5oz) Cream Cheese
225g (1 Cup) Pumpkin Puree
1/2 TSP Pumpkin Pie Spice
1/2 TSP Cinnamon
6 Digestive Biscuits (Graham Crackers) or Gluten Free alternative
68g (1/3 Cup) of Sugar
130g (3/4 Cups) of White Chocolate Chips
INSTRUCTIONS
Put the cream cheese, pumpkin puree, pumpkin pie spice, cinnamon and sugar in the blending bowl. Pulse to blend and set aside.
Put the graham crackers in the blending bowl and pulse to blend.
Combine the pumpkin filling with the graham cracker crumbs and pulse blend until mixture reaches a fine cornmeal-like consistency.
Form 1-tablespoon balls from the mixture and place on a wax paper covered plate. Set these in the freezer to chill.
While the truffles are chilling, put the white chocolate in a bowl and microwave in 15-second increments, stopping to stir in between (this is necessary so that the chocolate does not burn).
After the truffles have chilled, stick a toothpick in one truffle at a time and dip each truffle into the chocolate coating. Let any excess coating drip off into the bowl before placing the coated truffles back on the wax paper.
Let the coating set before serving. Store any leftovers in the fridge.
