SPICED ALMOND BUTTER BUTTERNUT SQUASH PURÉE – My Little Food Critic

This delicious and flavoursome purée is bursting with healthy fat and protein from the almond butter and the butternut squash is packed with calcium, folate and vitamin A.

This purée is SO versatile; mix it into yoghurt, spread on toast, stir into oatmeal or serve it as it is.

INGREDIENTS

2 cups/ 360g fresh or frozen cubes butternut squash (cut into roughly 1 inch cubes)

2 tbsp almond butter

1 tsp mixed spice

INSTRUCTIONS

Add the butternut squash to the steaming basket of your Babycook® and secure the lid.

Fill the steaming reservoir with water to level 3 (Babycook Solo Express 150ml on Standard Cooking Mode) and steam.

Once steamed, carefully open the lid and remove the steaming basket. Empty the water that is in the Babycook® blending bowl, and then tip in the butternut squash.

Add the almond butter and mixed spice.

Blend until smooth.

This can be storied for up to 3 days in an airtight container or can be frozen for up to 3 months, the Béaba Multiportion ®, is great for this!

Serve as a puree, as a spread on toast, mixed into yoghurt or added to oatmeal.

NUTRIFACTS 

Butternut Squash is a good source of vitamin A, vitamin C, magnesium, and potassium. Vitamin C supports the immune system and Vitamin A plays an important role in good eye health.

Almond Butter is a fantastic source of Vitamin E which is a powerful antioxidant.
