For the nutrition conscious
Due to its sharp acidy flavor, rhubarb is a fruit rarely given to baby. In this dessert recipe, the acidity is compensated by the sugar in the strawberries and those in the biscuit.
In this recipe, the strawberry is not cooked. Its sweet flavour is better retained without cooking.
As a replacement for gluten intolerance
A plain biscuit contains wheat flour. In organic shops, you can buy a similar gluten-free biscuit which you can crumble in the same way.
