INGREDIENTS
200g (1 medium) sweet potatoes (peeled)
1 heaped tbsp oats
4 large squares (40g) of dark or milk chocolate
1/2 tsp baking powder
1 egg
1 tsp olive oil
Optional extras: 1/2 tsp cinnamon, juice of 1/2 orange, 1 tsp maple syrup &/or 1 tsp cocoa powder
INSTRUCTIONS
Pre-heat your oven to 200°C
Chop the sweet potato into chunks and steam in the Babycook with the water reservoir filled to level 3 for 15 minutes.
Once cooked, drain the steaming/blending bowl of water before adding back in the sweet potato along with the oats, chocolate (melt in the microwave for a few seconds first, stirring regularly), baking powder, egg and oil. and blend until just soft & mushy (don’t over blend!)
Pour the mixture into your multi portions (spritz’d with a little oil in the bottom if you wish first) and bake for 30 minutes.
Allow to cool and enjoy!

Although it may seem strange, sweet potatoes work SO well in this recipe as they provide a soft fudgy texture, naturally sweet taste as well as fibre, Vitamin A & C
