TOFFE APPLE CAKE POPS

MAKES 8 CAKE POPS / PREPARE 20 MINS / COOK 25 MINS

INGREDIENTS

Cake Mix

85g all-purpose flour, sifted

1/2 teaspoon baking powder

1/4 teaspoon baking soda

Pinch of salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

Pinch of nutmeg

Pinch of ground cloves

1 large eggs

50g granulated sugar

25g dark brown sugar

30ml flavourless oil

60ml unsweetened applesauce

60ml buttermilk

1/4 teaspoon vanilla extract

Binding Fix

25g packed brown sugar

1 1/2 heaped tablespoons heavy whipping cream

1 tablespoons butter

50g confectioners’ sugar

Caramel

300g of golden caster sugar

3 tbsp of golden syrup

5 tbsp of water

lollipop sticks

1 cup finely chopped salted peanuts (optional) or sprinkles

 

INSTRUCTIONS

Place all Cake Mix ingredients in the Béaba Babycook® and blend. Pour the mixture into a prepared pan. Bake at 180 degrees for 25 minutes or until a toothpick inserted into the centre of the cake comes out clean. Allow cake to cool completely.

In a small saucepan, combine the brown sugar, cream and butter. Bring to a boil over medium heat, stirring constantly. Remove from the heat; cool for 5 minutes. Gradually beat in confectioners’ sugar until smooth.

Crumble the cake into a large bowl. Add the brown sugar mixture; mix well. Roll into balls & place into the Béaba Multiportions. Freeze for at least 2 hours or until firm.

Add golden caster sugar to a medium-sized pan with 3 golden syrup and water. Swirl the water so it covers the sugar but do not stir. Heat the mixture on a low heat until the sugar dissolves. Turn up the heat and boil the sugar syrup until it reaches 140°C on a sugar thermometer. Make sure not to stir the caramel at any time, you can just swirl it around gently in the pan.

Remove mini cakes from Multiportions and re roll.

Dip ends of lollipop sticks into caramel and insert into cake balls. Dip balls in caramel; roll bottoms in peanuts or sprinkles. Leave to stand in the multi portions until set. Store in an airtight container in the refrigerator.
