250 gr Cherry tomatoes
2 Shallots, peeled
1 Garlic clove, peeled
1 tbsp White wine vinegar or lemon
30 ml Olive oil
4 tbsp Fresh parsley
Salt and pepper to taste
Wash and half the tomatoes.
Put the parsley, garlic, shallots, white wine vinegar and 2 tbsp of olive oil in your Beaba Babycook and pulse a few times. Add a bit of water if is too paste.
Serve with a bit more of the olive oil and some more parsley. Taste for salt and pepper. Serve straightaway or cover and set aside for a few hours to let all those flavours develop.
You can use the salsa with grill meat, or fish, as an addition to your tacos/ fajitas ingredients, and why not in your breakfast with scrambled eggs.

Parsley contains VITAMIN C, an antioxidant which also helps support the immune system, VITAMIN K, which promotes blood coagulation and healthy bones, and certain ANTIOXIDANTS that may help reduce inflammation.
