VERY VEGGIE TOMATO SAUCE

MAKES 1 LITRE / PREPARE 15 MINS / COOK 45 MINS

INGREDIENTS

1             Red pepper

1              Medium onion

2              Garlic cloves

1              Small courgette

2              Medium carrots

800g       Organic tomato passata

2 tbsp      Refined Olive Oil

3 sprigs   Fresh Parsley

Salt & Pepper

INSTRUCTIONS

Peel and quarter the onion. Scrub and chop the carrots in large chunks. Chop the onions and carrots in your Béaba Babycook until quite small.

Wash and chop the pepper and courgette in large chunks too. Peel and crush the garlic. Chop the peppers, carrots and garlic in your Béaba Babycook until quite small.

Heat the olive oil in a heavy bottomed pan and gently fry the veggies until soft but not brown (10-15minutes)

Add the passata, bring to the boil and lower the heat and simmer very gently for 45 minutes, stirring every now and again to ensure it is not catching at the bottom. If it is, lower the heat and add a little water.

Once is cooked, correct the seasoning and add the basil leaves. Blitz in your Béaba Babycook until you get your desired consistency – from chunky to very smooth.

Serve with pasta, chicken dishes or use as a base for soups and stews.
